Weight Watchers Taco Soup
Let me first state that I have missed blogging.
But more importantly, I weighed-in today. I lost 2.6 pounds last week. Yay!! I have lost a grand total of 9.6 pounds in two weeks. Oh yeah baby. That loss brings my current weight down to…….. (scroll down for the magic number)
Yeah right. Like I am really going to announce my weight to the world. I had ya going though huh?
Also, today was the first day that I left my house with baby in tow without the aid of The Hub. Which is no big deal. However, it is a little difficult when one has an EXTREMELY spoiled 3-week-old baby. Someone must be holding him at all times or Tater screams bloody murder.
I have timed my baby. Once I lay him down in his bed or put him in his swing, I have exactly 10 seconds before all Hell breaks loose. So, as much as I hate to admit it, the poor little guy just has to cry sometimes. It is really very difficult to take a leak while holding a baby.
Then there is showering. I take my personal hygiene very serious. I was NOT leaving my house today without a shower. But, Tater would not let me put him down long enough to take one. (I can’t shower in under 10 seconds.) I contemplated not going to Weight Watchers because of my dilemma, but decided that it is just to important to me to miss. So, I pulled his little basinet to the bathroom door, put him inside, and hopped in the shower. He screamed the ENTIRE time. The instant I picked him up, all was well. I put my make-up on while holding a baby. (Where’s my award for that?)
He really loves to be cuddled.
Anyhoo, the main point to this post is a Weight Watchers recipe. (Yes. I cooked. Great gobs of gooseshit Batman, I cooked!!!) I haven’t cooked anything, literally ANYTHING, since I delivered the spoiled Tater, so today was kinda monumental. I put the baby in his swing while I threw this together and guess what he did? He screamed.

He stopped completely as soon as I picked him up.
It’s quite cute actually. (Is it awful that I find that entertaining?)
Recipe:
In my neck of the woods, every WW’s member has tried this at some point.
Weight Watchers Taco Soup…..
1pound lean ground beef, browned and drained (I used lean ground turkey)
1 onion, diced
3 cans beans (chili, kidney, black, or whatever you prefer)
1 can diced tomatoes
1 – 15 oz can tomato sauce
1 1/2 cups water
1 can corn
1 – 4 ozcan diced green chilies
1 pkg taco seasoning
1 pkg ranch dressing mix
Mix together and heat thoroughly. 2 points per cup. (omit meat and corn for 1 point servings.)
Good stuff.
That’s it for now. Lord knows when I’ll get around to cooking again, so it could be a little while before I’m back. Hopefully it will just be a couple of days.

Now this is what I like. I’m going to have to make the soup. Also, I can’t believe you let my Tater cry. Do I need to come save him from his mother who thinks she needs showers and soup?
